Chicken Tinga, or Tinga de Pollo, comes from the Puebla region in central-eastern Mexico and is now a popular dish at street festivals. Its distinctive flavour comes from the winning combination of tomatoes, onions, garlic and smoky dried jalapeños—better known as chipotle chillies—which give the dish its gentle smokiness. In Mexico, tinga is also made with beef or pork.
