Diese Fajitas sind das mexikanische Pendant zum Hamburger: würziges Hackfleisch vom Rind und herzhaftes grilliertes Gemüse in einer weichen Tortilla.
Zutaten
1 Packung mit 8 Old El Paso™Flour Tortillas
900 g mageres Rinderhackfleisch (höchstens 20 % Fettgehalt)
2 Teelöffel frische Limettenschale, gerieben
2 Esslöffel frischer Limettensaft
2 Esslöffel Chilipulver
2 Esslöffel Tomatenmark
4 Knoblauchzehen, fein gehackt
2 mittelgrosse rote Peperoni, in Streifen geschnitten
2 mittelgrosse Zwiebel, fein geschnitten
4 Teelöffel Pflanzenöl
120 ml Crème fraîche
8 Teelöffel frische Korianderblätter, gehackt
1 Guacamole (falls gewünscht)
Anweisungen
Preheat a gas or charcoal barbecue. In a medium bowl, mix together the mince, lime zest, lime juice, chilli powder, tomato purée and garlic. Shape into 8 sausage-like logs about 15 cm long. Thread onto metal skewers (about 30 cm long) and gently flatten with your hands.
In a second medium bowl, toss the peppers and onions with the oil. Tip into a foil barbecue tray.
Put the beef skewers and the foil tray on the barbecue. Close the lid and cook over a medium heat for 7–8 minutes, turning the skewers after 5 minutes and carefully shaking the veg tray now and then. The beef should be cooked through and the veg tender with a bit of bite.
Slide the beef off the skewers and pile down the centre of each tortilla. Spoon the veg over the top.
Finish the beef mince fajitas with crème fraîche and coriander, and serve with guacamole on the side, if you like.
